Select the Recording tab. You should see your internal mic as the default recording device. Plug in your earbud/mic headset, then you should see the headset device appear and it will change to the default device. With the headset still plugged in, select the internal mic device and click "Set Default".

It does not provide individual meeting volume control as the question asked. ZOOM REALLY needs to add a simple mute speaker button like the mute microphone button at the bottom of the meeting window. It's stunning that it isn't already there given the large number of webpages proposing workarounds to this major oversight.
